Lobio is a family of dishеs of different kinds of prepared beans, comprising coriander, walnuts, garlic and onion, well-known item in the cuisines of the South Caucasus nation of Georgia. There are a lot of varieties of lobio, both hot and cold.

While there are many methods of making lobio, the most spread of which is a cold dish called Lobio Nigozit, characteristically made with dark red bud beans which are cooked and then mashed with garlic, onions, walnuts, coriander, marigold petals, chili pepper and vinegar, and then is marinated overnight. A hot version is generally made with white beans.
Lobio, in its traditional format, progressed to become a standard recipe the ingredients of which changed depending on the place in which it was cooked.
